Healthy Living Expo Recipes

We hope you enjoyed visiting the Master Gardeners of Hamilton County booth at the Healthy Living Expo at the Chattanooga Convention Center.   In response to your requests, here are recipes for two of foods served that featured herbs:

Cucumber Dill Dip

Ingredients:

8 oz softened cream cheese

1 cup mayonnaise

2 TB thinly sliced green onions (scallions)

1 T Fresh lemon juice

2 tsp fresh dill or 1 1/2 tsp dried dill

2 small cucumbers

Cream together softened cream cheese and mayonnaise until well blended.   Fold in the sliced green onions and fresh lemon juice and dill. Quarter cucumbers lengthwise and remove all seeds. Then dice them into very small pieces. Add to mixture last and fold in.  Serve on crackers.

Lavender Cookies (courtesy of Gantz Farm)

Ingredients:

1/2 cup (1 stick) softened butter

1 cup sugar

2 Eggs

1/2 tsp vanilla

1-1/2 cups flour

2 tsps baking powder

1 T dried Lavender Flowers finely chopped or ground in a spice grinder

Preheat oven to 375 degrees F.  Cream butter and sugar.  Add eggs, and beat well. Add vanilla and stir in. Stir in dry ingredients until well blended (including Lavender.)

Drop 1/2 tsp from a spoon onto an ungreased cookie sheet. Bake until just slightly brown–8 to 10 minutes. Cool slightly before removing to paper towel or rack.
